Re: A question about my lager procedure
Here's where I am so far with this pilsner I've got in the works. I checked the gravity 8 days in. Was around 75% done. So I raised the temp on the JC from 52 to 62. This yeast's Happy Zone is 50-55, so I figured low 60s would be good. The temp raised slowly in the fridge, and it's been in the low ...

Re: Good bye to my buddy.
So sorry Leigh, it's such a difficult thing to lose a family member, even after such a short time.
Please accept my condolences.

Re: Do you have a "go to"
I have more fun buying mixer sixers and trying to pick six beers that I have never tried before. It hels me to better understand various styles and seems to help when designing new recipes. Alas though, when they are practically giving away Ommegang, Stone, Bear Republic and some others, I can't res...

Re: Sour mashing.
Hey Phil, In 'Brewing Classic Styles', Jamil Zainasheff talks about three methods for souring a mash... 1.) You can simply add lactic acid. This method is quick and easy and allows you to control the amount of sourness in the beer. The bad (maybe good?) news is that the amount of sourness won't chan...

Re: Siason Recipe
Me too, I just ordered up the ingredients to give it a try. Seems super easy. Second hop boil for me, but only 30 minutes. I hope I can get by with a smaller boil as I don't have that big of a pot. :) Monty Yeah Monty, It's was actually designed to use 1.25 gallons as the boil volume to get the hop...

Re: Siason Recipe
Here's my 'Simply Saison' all extract recipe... It uses Pilsen Light (Liquid or Dry) Malt Extract, Munich Liquid Extract, Hallertau Hops and Danstar (or any) French Saison yeast... It is sized for an LBK. You can sub out the hops for Saaz, Tettenang, EKG's etc. as long as you keep to around the same...

Beer-lord's Red's RyePA
Not too long ago, Paul (Beer-lord) was extremely generous and sent along some gifts. In front of me is his Red's RyePA! http://i1247.photobucket.com/albums/gg627/BigPapaG/2491883C-0F88-4314-BFD4-F41B40A3F1DA-11850-000016864108944C_zps7b944672.jpg First impression: Wow, Yum! Hope it works out for you.
Remember to unplug the fridge while investigating... Deadly 120volt AC in there...
if you are not comfortable, get a pro to do it.
