Oak can come on pretty quickly and too much can overpower your beer (or wine) I think your plan of using oak toasted to various degrees is novel and could bring a very interesting and complex result to the party. Got A LOT of yeast in-house, both liquid and dry... And I have no qualms about using either type... I don't always re-hydrate the dry strains, and I don't always wait for the smack packs to swell, and I don't always make a starter... But it goes like this... Designed an English Barleywine and wanted...

The MB products are good, heck, the Coopers branded products are good as well.. I would have no reservations using them, either as they exist or in combination with a custom brew I might be inclined to whip up! And their customer service has always been Second-to-None! I will no doubt remain a custo...

I got my left hand milk stout almost on the mark. They taste almost the same even when compared side by side but the left hand has that nitro mouthfeel that I dont know how to duplicate.
