Berryman, your last paragraph is what I plan to do. I will be using stevia(non fermentable) to back sweeten. Back sweetening Apple cider
I will be bottling my first batch of hard cider in a little over a week. I plan on using 12 oz bottles and plan to back sweeten with stevia. Any suggestions on the amount of stevia(can use sugar equivalent) for each bottle? I would like to have the cider just slightly sweet and somewhat fizzy.

I may have worded my original question incorrectly. What I was wondering was if anyone had success with twist off bottles using their original twist on caps. I do understand that because of the thin nature of the glass neck you would not want to cap one of those bottles with a pry off cap and capper...

Watched Some YouTube videos that showed a number of people re-using glass bottles and twist off caps from commercial beers such as Blue Moon. They seemed to have had good success. Thanks for all the great info. My new batch of Twisted Monk is now fermenting at a constant temp of 68-69 degrees. I plan on leaving it in the fermenter for 18 days, then condition in bottle for at least 3 weeks.

Checked the Domino site and they say equivalent to 1/2 tsp. I’m not sure of their size though and still wonder if they easily fit into a 12 oz bottle. Will one dot create enough carbonation for a Witbier? BrewDemon recommends 3/4 tsp.

Carbonation
Several people on the forum mention using Domino Dots for carbonation. Do they comfortably fit into the mouth of a 12 oz bottle? Also, one post stated that they were equivalent to 1/2 tsp, but the info on the Walmart site says they are equivalent to 3/4 tsp. Are these made in different sizes?

Brewing a Twisted Monk Witbier today. BrewDemond gives a fermenting range of 64 to 84 degrees. Is there a “best” temp for brewing this beer, and if so, why?

I know that people assimilate and can feel differently with the same percentage of alcohol, but how much difference does a few tenths of a percent make? For example, 4.6 abv verses 5.0 or 5.6 abv? Since I have never tried the Twisted Monk as it is without altering it with sugar, I will brew it as it is and let it ferment and condition longer than the instructions indicate in hopes of a good beer. I’m planning on brewing some Twisted Monk Witbier tomorrow. It comes in at 4.6 abv and I’d like to up it about 1%, close to Blue Moon’s abv of 5.4. I won’t be using any extra malt extract. Hi. Brand new here and have only brewed one batch of wheat beer using a Mr Beer kit. It came out really good. I have since bought a Brewdemon fermenter and plan on brewing up some beer tomorrow. Looking forward to getting lots of info on this forum.
