My Brew Demon pilsner was also darker than expected. This can be due to older HME/LME. I have not seen much info about how old it has to be to start to darken though. Sampling is about an ounce at a time since I currently use a refractometer. But, I might not have been as diligent in sanitizing the inside of the tap before and after the samples. Sigh. Looking good but just wondering why tried re-hydrated on 11.5 of 05 on 2.5-3 gal on a 1.048 beer. one pack dry would easily take you there. BUT good to learn how to re-hydrate. The original idea was to do 3 weeks on the primary but you know life, so I had to bottle a week earlier.
