2012 Fegley's Brew Works Rude Elf's Reserve. It's really mellowed out over the year and I drank it all to easily. So good. I have 1 bottle left from 2011, and 2 more 2012's. I just took a sample taste a week after adding the ounce of Citra hops. It has a much more forward citrus feel to it now and less sweet. I think I'm going to bottle it soon.

I want to make an applewine of around 15% abv that still has some residual sweetness. I figure I will need to start around 1.120og and I'd let it go to around 1.004fg. I plan on using EC-1118 yeast for this.
How do I figure out how much sugar I'll need to hit that og?

Over the weekend, I racked this to my secondary/bottling container. Here's what it looks like. Well I decided to go ahead and hit the cider today. As a first 'experiment' I just left the cider in a primary jug for 4 weeks and just poured it carefully into a couple of growlers leaving the dregs behind and stuck plastic wrap over them and in the fridge. I'm gonna drink a good bit of this today...

My co-worker lives 10 minutes away from Victory's brewpub (we both work from home). He often goes there for 3 hour "lunches". I only wish such a place could exist 10 minutes away from where I live.

In my opinion you can get away with a gallon. You might want to consider getting an outdoor burner Other option is to use two pots and split the difference. You need a SMALLER POT. :lol: :lol: :lol: Sorry couldn't resist that dig at certain persons on the Borg (they know who they are). Seriously though if you are using HMEs why not try a hop stand instead of a short boil? Hold your wort temp under 140F for twenty or thirty minutes with your hops in it....
