I'm getting spring fever too. I no longer brew indoors, and I ferment in my garage via temp-controlled fridges. As a result, I have been limited to brewing lagers during the winter months. Ideally, I'm still a few weeks away from ale weather - but, I'm very much looking forward to it.

How long, and at what temperature did you allow the beer to carbonate? Two to three weeks at room temperature (68-72, or so) should do the trick. With the carbonation drops, three weeks might be needed more often than not.

...Have you been hitting the estimated ph in EZ water for your beers? .....Have you tasted an improvement or noticed cleaner clearer bers as well from the calcium? I don't have a pH meter yet, so I am currently putting my trust in the ez water calculator - for now. Just picked up my calcium and gyp...

I think most people find the cylindrical coolers to be the best option, but a rectangular cooler would work just fine. If you already own an appropriate-sized rectangular cooler, then it would be cost effective to just convert that. But, if you have to purchase a cooler anyway, then I would recommen...

I'm at the point where I prefer glass carboys, despite the obvious risks. I currently use four; 6.5gal, 6-gal, 5-gal, and 3-gal. The 3-gallon glass carboy is fairly easy to haul around, Dave. I think you'd be quite happy with it.
