I'm not much of a Stout drinker though. Kegging that would be a wasted keg for quite a while. I really should've only made three gallons instead of five though. Less bottling time.

I've forgotten how much effort goes into bottling 50 bottles of beer. I've spoiled myself with all the kegging. It's been so long since I bottled I had to really thing about the process a bit.

It's probably been 10 weeks since the last time I brewed anything. Today I've got a California Steam going and this afternoon I'll do a quick Cervaza. This has been a good day.

I just leave it at serving PSI. Once it's carbed, it'll stay that way unless you're leaking CO2. Think like this, you bottle prime using sugar, once all the sugars been consumed the bottle stays carbonated. Same basic kind of concept.
