Just started another batch of beer over the weekend.
This one is the Nut Brown flavor. it should be ready to bottle when I come back from Philly after Labor Day.

I have a wheat beer that was very active in the initial fermentation. It has calmed down now (about 5 days in). I would like opinions as to how long fermentation should be and what the reasoning behind the opinion is. In researching here and on other boards it seems like I got a lot of opinions but...

Luckily, mine only calls for boiling the water, and then pouring the beer base into the hot boiled water to make the wort! That way, it does not overcook or boil over, creating that burnt mess that you've had to clean up.

Even the brown one must not be exposed to sunlight during the fermenting process.

I started a batch of hard apple cider beer last Wednesday. Was going to bottle it yesterday, but it still looks like it is fermenting. So I'll check it tomorrow.

I've been there and know just exactly how it feels to lose beer that's fermenting! I hope that doesn't ever happen again.

I thought about that as well. But what I do now is put some cold water into the fermenter with the spigot secured and fastened to see if it will leak at all. I never knew that the spigot was so delicate and sensitive! They actually sent me TWO spigots, but I'll order a few more just to keep on hand ...

A similar screw-up happened to me, but it wasn't with the One-Step Sanitizer. The spigot was loose and the wort started leaking from the fermenter! Tightened it, and it leaked even more!! Turns out that if the nut for the spigot is tightened too much, the thread will break from the spigot. I lost a ...
