I went the AG route almost immediately after starting to brew. I am a chef and just can't help but mess with food. One of my best brews was a pils a couple of years ago which was straight DME. Do what you enjoy and you will always have great brew!!

A few of my high ABV brews need a year to condition. Several months in secondary which gets sugar feedings then bottled in champagne bottles some of my sours take about six months

I am in level 4 will work with any level. Need some good diversion this fall/winter. Wive is getting both knees replaced, me with the kidney failures now I also need to have a specialized type of shoulder replacement.
