I love a dunkle bock. Once I have all my other fermentables taken care of,

I would also like to add a lot of older recipe says to add
acid blend upfront but that needs to be added after the
fermentation because honey does not have natural buffering
and the fermentation turns too acidic and the fermentation will
stall.

I have also taken BrewDemon's Tart Cherry Cider and substituted honey instead for the sugar. I have not posted the recipe for it because I think next time I need to use K1v-1116 yeast because the cider yeast struggled with the fermentation. You just take the amount of sugar required and multiple it ...

This is good one that came from Joe Mattioli, the same guy that did Joe's Ancient Orange Mead (JAOM) from the GotMead site. It works well with Grape Peach, Grape Black Cherry, etc. Just stay away from the ones that are labeled "Cocktail". This is for one gallon just multiple by 2. Here it ...

A basement is something that I wish I had.
I would have claimed it for my brewing .
I have a spare air conditioning unit that I
may use to build a fermenting chamber out in
the garage one of these days.

I life in Arkansas, so it is quite humid already.
I have used frozen water bottles to keep the temp down when it is not so hot.

I think I will chime in even though I have just been at mead making for a year and I gave most of my mead to my son an his new bride for a wedding gift. I would recommend heating the honey just enough to get it out of the jars. The commercial meaderies do not heat their honey. This keeps the aromas....

Quick cheap cider from beer lees
I dumped on top of BrewDemon wheat beer lees the following:
One gallon of Kroger Apple Juice
1/4 cup Brown Sugar
1/2 cup Sugar
ABV 6.5%
Finished in 4 days
Bottled carbonated.
Not too bad after one and half months for cheap booze.
I will try again in the future. Maybe with all Brown Sugar.
