Wow, I hadn't brewed any beer in about 6 months, I did a couple of root beers a few months ago, but no beer. But I got back in the saddle this weekend.
Brewed a Kolschbier on Sunday and a pale ale today. Can't wait to try the Kolschbier, my first go at that!

Well I had to pull the bag of ginger pieces after I went back for some samples. After steeping for about 10 hours, it was pretty strong. But it did taste great. Can't wait for it to get carbed, should be a refreshing drink. And yes, John, goslings would be good with it. I like their rum a lot.

Caribbean Ginger Beer (soda)
First attempt at making this. Here is my recipe for a 5 gallon batch. Bring one gallon of water to boil. Add 3 cups white cane sugar and 1 cup brown sugar. This did turn out pretty good, and since then I have made a couple of batches of root beer as well. I have a dedicated keg for just soda. Today I plan to make a Jamaican ginger beer with fresh ginger.

That looks like a great recipe. I love the pale ale.. Grain to glass in 3 or 4 weeks, and then even better at the 6 week mark.

Kegconnection.com has 5-gallon pin lock kegs on sale for 29.99 so maybe I will pull the trigger on one so I can have a keg for sodas.

I've been wanting to do a Sarsaparilla, but just didn't have a keg or tap that I wanted to dedicate to sodas. Congrats on your root beer, this is really wanting me to brew a batch of cream soda, root beer, or sarsaparilla. Maybe I will ask the wifey for a keg and some extract for Christmas...

Hey this has gotten much better after the first few samples from the keg. It was pretty harsh in the beginning, not sure but has also happened with some other brews for me. But now it has turned into what I was expecting... Boozy, molasses, toffee and dried fruit. Yay!

Flavor and aroma are pretty good, I had a couple of pints this afternoon while watching football. Just a simple pale with some Citra kick. I am sur it will get better, but pretty old at this point.

Well... Not too happy with this one. Way too much alcohol presence, and has a solventy off flavor. Hoping it improves in the keg after a few more weeks, but doubting it at this point.
