Quick update: We are working on finding a local brewery for a partnership to make a Gouda Stout bread. That sounds amazing to me! Having a lot of fun (with some loooong hours) so far.

I am escaping the corporate company yoke to help open and co-manage a bakery cafe in my downtown. We have tons to do, but I've already floated ideas about using beer to make a few bread products. Also, sometimes they are optimistic about attenuation. They may look at best case attenuation and post ABV based on that. Also attenuation/fermentability changes with the age of the LME/HME. The older it gets, the less it probably is, is the short answer. But I don't think anyone has said this yet,...

Honestly you should figure the ABV wil come out below what a company claims for extract kits.
Unless you are going to stand there an scrape every last molecule out of the can.
Also, sometimes they are optimistic about attenuation. They may look at best case attenuation and post ABV based on that.

Update: At bottling this was already very tasty. I'm guessing the strong oaky flavor was masking any early off flavors. I'm pretty excited to sample this one in about 6 months!

@Pudge, it's not black, the roasted barley wasn't any more in %age then you'd find in maybe an Irish Red. It by no means would be something I'd call a "Black British IPA". If you review it as an IPA it's pretty horrible. That's why all the reviews are so horrible. If I was just reviewing ...

Call me strange, but I love the Beam. I actually prefer the Rye, but that wasn't profile I was going for here. Now, obviously if I could afford it, I would get the super premium stuff. But anything under super premium I go with Jim Beam.
