Ok update for all of you... I bottled my second batch today after leaving it longer in the fermentor per all of your suggestions. In fact the pale ale with lime I made was in the fermentor for 4 weeks. It tasted really good flat (had a little sample)... Strong lime flavor gave way to a robust nutty ...

It's been tough here in SoCal last few weeks. Temps have been in the high 90's and my beer is in the garage so it can get quite hot in there!

Yeah! Still aging the Pilsner mistake but not having to vent them any more Beer - Lord and Mashani. They taste pretty good. Good to know John thank you. For those of you that want to know.... I have now vented 5 times almost every day (the first week) since bottling. We are on what week 3? And i have left them alone for about a week. I cracked one to sample and it's really clear and the sweetness has fallen away. Tastes ...

Well my fermentor is in the garage so I'm not sure how comfortable I am with popping the lid in that environment. I'll probably go with your sugar cube recommendation and bottle prime the current batch.

Ok so lets say I want to use a priming solution to my second batch (which is in the fermentor now)... Do I just open the lid and carefully mix it in? Then leave it for 1/2 an hour before bottling? But if I take the top off the fermentor won't that risk contamination...? Please advise.

Those PET bottles can take a lot of pressure before they burst. Once you decide to stop venting, watch the tootles closely. If they start to bulge, vent again. Ok will do thank you.
