Re: Hello from Long Beach CA
Ok update for all of you... I bottled my second batch today after leaving it longer in the fermentor per all of your suggestions. In fact the pale ale with lime I made was in the fermentor for 4 weeks. It tasted really good flat (had a little sample)... Strong lime flavor gave way to a robust nutty ...

Re: Temperature and aging beer....
It's been tough here in SoCal last few weeks. Temps have been in the high 90's and my beer is in the garage so it can get quite hot in there!

Yeah! Still aging the Pilsner mistake but not having to vent them any more Beer - Lord and Mashani. They taste pretty good. My second batch, the Pale Ale with lime juice and peel is about to be 3 weeks in the fermentor. It's all good right now! John Sand... I used to race Lazers as a kid. I love a g...

Re: Hello from Long Beach CA
Good to know John thank you. For those of you that want to know.... I have now vented 5 times almost every day (the first week) since bottling. We are on what week 3? And i have left them alone for about a week. I cracked one to sample and it's really clear and the sweetness has fallen away. Tastes ...

Haha! That's tue......Kealia wrote:I wouldn't worry too much about over-venting as you have a LOT of carbonation in there. Besides, if it ends up flat you English like a good cask ale, right?

Re: Hello from Long Beach CA
Update on my humiliating first batch balls up (probably a good name for the beer when done)... For those still interested. I drank one yesterday for scientific research purposes only. Forget the champagne of beers, this was like the Old Faithful Geyser of beers. Very, very carbonated. Looked pretty ...

Re: Hello from Long Beach CA
Well my fermentor is in the garage so I'm not sure how comfortable I am with popping the lid in that environment. I'll probably go with your sugar cube recommendation and bottle prime the current batch.

Re: Hello from Long Beach CA
Ok so lets say I want to use a priming solution to my second batch (which is in the fermentor now)... Do I just open the lid and carefully mix it in? Then leave it for 1/2 an hour before bottling? But if I take the top off the fermentor won't that risk contamination...? Please advise.

Re: Hello from Long Beach CA
Those PET bottles can take a lot of pressure before they burst. Once you decide to stop venting, watch the tootles closely. If they start to bulge, vent again. Ok will do thank you. What is a tootle..? That started out as bottle, but somehow didn't end that way. Haha. I wasn't sure if that's what i...
