Saison!
I just did a LBK (2.25gal) of 2 lb 4oz light DME and cascade hops with the good old Belle Saison dry yeast. Can't wait!

Saisons are made with whatever the farmer had on hand, so wheat, barley, etc. whatever you have left around can go in. The flavor seems to me to come entirely from the yeast, so it isn't critical. And yeah the hard part with that yeast is NOT making a 10% beer. I shoot for 1.45 OG and hope it doesn'...

FWIW, I can tell you the mechanism it uses to make beer (heating to 150 with a step mash, no actual boil) makes beer just fine, I've done it I think 4 or 5 times now (lost track) in my Mash & Boil and it's make good beer every time. Since they will be using steam hops it will be easier for them...

I always wanted to try the Professor's ancient brew he made from that Babylonian bread/beer prayer. Was it Nikasi or something? (we have a Cherokee mound in town called Nikwasi, so I get them confused)

Hey, I know it has been over a year or so, but I am now retired and moved to my new retirement home, and ready to start brewing again. So just wanted to say Hi, and watch out It is good to see Mashani(Beer encyclopedia man) and others still posting.

Well, since I am just doing a gallon of water plus the DME etc, I cool that down to 90-100 F by putting the pot in the sink in ice water, and then I put a gallon of refrigerated water in the LBK and then pour in the cooled wort and top off with more refrigerated water. whoa 2.5 teaspoons? in a 1 liter bottle? I normally use 1/2 to 3/4 teaspoon (2 or 3 domino dot sugar cubes - I find sugar cubes to be so much easier to deal with) That is high, I think the PET liter bottles are pretty strong and I've never had one blow, but I don't think I've put that much sugar in ...
