I didn't brew from November to March. I hurt my shoulder then had a boat emergency to deal with. Now there's five gallons of Fifteen Minute Pale ready to be kegged. Next is my continued pursuit of a better pilsner.

I'm glad you found a solution. Those spigots are a weak point, I've had failures and leaks. I have fermented a small batch in a 12 qt stainless pot with a lid.

I do the burst, 30 psi for 30 hours.

All the things that BPGreen said! Also, you can find extract recipes in books or online and scale them. You should be able to find supplies at a reasonable price. I always suggest that you start with proven recipes. If you find then online, make sure there's plenty of feedback. "15 Minute Pale ...

I've thought of low alcohol beers, and read some. If I were to make an NA, I would start with a small beer. There are grains that add body and mouthfeel, and yeasts that add flavor. Belgian Rye?
