I'm thinking maybe going with a Dunkel next after the American Lager and use the same yeast what should also be good for that. What a good starting grain bill? I have some specialty grains on hand. I like to plan ahead some and not that far away when ordering stuff.

No, not that I don't think they do a good job, but I have my mill fine tuned for the way I brew. I seen the same thing if my LHBS did it for me also.

If you want to stick with the fermenter you have, you might be able to find a better spigot that you could make work.
