You want the lager to carbonate at the same temps as an ale.

Another thought about bottling (jarring) beer. To what degree could the beer have or have not still been fermenting. If it is in a sealed ceramic vase, when it breaks the seal it is ready (and would have been carbonated)? If the seal is good would the jar blow out if bottled (jarred) too early?

......but if there is a large production of unmalted emmer heated in vats....are they really bottling (jarring ?) wheat water?

I once did what I called an Olde Style California Lager using 34/70 at 60ish. It had a slight butterscotch. Worked fine for that beer.
