The cans of extract are still usable, unless they have leaks or if they are bulging. If there are any leaks or bulges, they should be discarded because they can contain toxins that can't be destroyed even through boiling. The end result will likely be a little different than originally intended, but...

That's perfectly normal and expected.

What towe seeing is trub (rhymes with boob). It's a combination of dead and living yeast, hops, various proteins, etc.

I forgot to mention that there's another system called Mr Beer that makes small batches. I don't know whether they ship to Canada or not.

Another option is to get a second fermenter and make two batches at once.

Welcome. You don't need to transfer to a secondary. I've been brewing for more than 10 years and have never used a secondary. You can use any kit with the Brew Demon. It's just a fermenter. If you buy a 5 gallon kit and divide it in half, you can make two batches. Each batch will be a little stronge...

Thanks for the info. That answers my question about whether I can skip the fermentation process altogether. Sounds like the plan is to brew as usual, then heat to drive off the alcohol. Seems like kind of a shame to do, but I've got a bunch of grains (and hops and yeast) and I may as well use it all...
