What towe seeing is trub (rhymes with boob). It's a combination of dead and living yeast, hops, various proteins, etc.

Welcome. You don't need to transfer to a secondary. I've been brewing for more than 10 years and have never used a secondary. You can use any kit with the Brew Demon. It's just a fermenter.
