Standard infusion mash, step mash, or decoction(s)? I honestly had a ton of fun doing a marzen with the single decoction, for as much work as it took to brew. I don't think I would do more than one decoction though.

From my experience at work, we add extracts after fermentation, in the brite tank. You can rack to a secondary vessel and add extract a little bit at a time until you get the flavor concentration you want. Brewing an imperial witbier with blood oranges today, and sipping on a Bubs' Pale Wheat Xtra while the mash sits. Blown away by the clarity of this wheat beer.

I'm curious. What happens at a brewery when you make a batch that isn't what it's supposed to be. If your nut brown is supposed to be 4.5% ABV and a batch is 5.5% ABV, what do you do? I did 5 gallons and I added the gelatin at kegging but if you're going to bottle it you want to do it after cold crashing and before bottling. I believe it was 1 tsp gelatin to 2/3 cup water. Sprinkle the gelatin into the water and heat it 10 seconds at a time to get to temp between 145 and 155°F. T...
