Re: RCE RayYankee & jimjohson

Standard infusion mash, step mash, or decoction(s)? I honestly had a ton of fun doing a marzen with the single decoction, for as much work as it took to brew. I don't think I would do more than one decoction though.

You can rack to a secondary vessel and add extract a little bit at a time until you get the flavor concentration you want. If you were to add it at bottling, you won't be able to add more if you find it needs more fla...

Brewing an imperial witbier with blood oranges today, and sipping on a Bubs' Pale Wheat Xtra while the mash sits. Blown away by the clarity of this wheat beer.

What are you brewing/bottling?

I'm curious. What happens at a brewery when you make a batch that isn't what it's supposed to be. If your nut brown is supposed to be 4.5% ABV and a batch is 5.5% ABV, what do you do? Call it something else? We just go with it. Stronger batch, same name. Although with my efficiency being where it i...

Re: Ottoberfest (Marzen Lager)

I did 5 gallons and I added the gelatin at kegging but if you're going to bottle it you want to do it after cold crashing and before bottling. I believe it was 1 tsp gelatin to 2/3 cup water. Sprinkle the gelatin into the water and heat it 10 seconds at a time to get to temp between 145 and 155°F. T...
