I have to confess that I cheated on the Chinese version. I used Google translate for that. I can say ir in mandarin and Cantonese (not much more than that), but don't know how to read or write any Chinese. I did the Vietnamese version without any help.

I'll have to Google those other fermented foods you mentioned. I'm not familiar with them, and I'm trying to increase the diversity of bacteria in my gut. I've done a few 16+ lb grain bills in the m&b. But efficiency seems to suffer if I push too hard. Maybe I'll consider doing a combo like that...
