I do the same thing Chris... And while I will keep sealed packs (and have) for a couple of years, (even three...), the opened ones quickly begin to oxidate starting the day they are opened imho. Having said that, if they start to smell cheesy, or 'of the freezer'... (You know that smell...), then to...

I'ld be curious to see how they fare with some age on 'em too... :cool: Hey, FYI I popped open a bottle of this to see what it's doing and it hasn't lost anything. Cold steep isn't keeping it from aging well. It's still nice....

I think if one is going to make a spruce beer, one must take care to not use too much and to only use the new growth sprigs... I had a local homebrewers spruce pale ale about two years ago... Initial tasting was about 4 ounces and was pretty impressive... Piney, woodsy... Overall, not too bad... Unf...

Not too often you see the majority of the grain bill as Pilsner in an IPA. Should be nice and dry @ 148 deg. mash. Hmmm, really? I guess, now that you mention it, most people use some sort of pale malt... I use Pilsner exclusively... Even in darker beers like porters, stouts, reds, scotch ales, etc...
