My favorite 5 minute brewday. We drank my last bottle of cider at the Nashville meet-up, so time to make another batch. I didn't take any readings or measure the honey this time... I had a bottle of honey that was maybe 1/4 full, so I'm thinking it was 4oz or so. Differences from
last time are that I used apple cider this time instead of Whole Foods apple juice, I added more acid blend (1 tsp this time, which is a lot more than last time), and I used Cooper's/Mr. Beer yeast (last time was champagne yeast). Basically pour off some of the cider, mix with the acid blend and honey and bring to boil. Cool and combine in a sanitized one-gallon fermenter with the rest of the cider. Drop yeast. Easy peasy...
Now we wait... I'll likely ferment in the primary for 2-3 weeks, and then transfer into a secondary off of the must for a few months or more. I think it really hit it's stride at the 1.5 to 2 year mark last time.
