Jimbo's Freedom Wheat Ale

3# Muntons Wheat DME
.25# Carapils steeped
.5oz Liberty for 45min
Lallemand Munich Wheat yeast 11.5g

Batch size: 2.13g
OG: 1.066
Est FG: 1.016
ABV: 6.4%
IBU: 17
SRM: 6

I am going for a simple wheat beer recipe here. Planning on making this one on Saturday.

Should I pitch the whole packet, or use half and freeze the rest?
Fill with mingled cream and amber,
I will drain that glass again.

Nothing wrong w/ pitching it all. Give the yeast the best chance to work their magic. Better than worrying about underpitching because of unviable yeast left in the packet.

fwiw I split yeast packs a lot just spilt to 5.75g more than enough to do 2.5 gal. More than comes in the MrB packs

It's been a month. I assume it's conditioning now? I'd like to hear how it turns out, as I am interested in making a wheat/blonde mix of my own.

Yep, it was bottled 9-18.

I know that wheat beers are better young but I bottle prime, not sure how long I should wait before cracking one.

Not sure. Never made one. I usually let all my brews sit 3-4 weeks before cracking one. If I like it, I drink it. If I don't I let it sit longer, opening a new one every week or so to get an idea of the taste at different stages.

Just popped open a trub bottle, and it is delicious!

Very smooth, the banana note is very subtle and there is no clove presence. This one fermented very cleanly.

Its very cloudy because I elected not to cold crash it, and the munich is a low flocculating yeast.

Nice full body.

I would certainly make this again as is!
