What are you brewing/bottling/kegging?

Post by philm00x »

I feel the need to brew but I can't for a while. But currently I've got a Belgian pale ale in the fermenter that was dry hopped a week ago. Fixing to cold crash it in the next day or so, provided the gravity is terminal.

Bottling my Jamaica Mon mod
1 Patriot HME
1# Amber DME
1 Smooth LME

Trying to figure out what I brew tomorrow. I bought the new Dad's Cream Ale recipe. Thinking of swapping the 1/2C honey for 1/2# extra light dme i have laying around.

So:

Daddy Jim's Cream Ale
1 Patriot HME
1 Pale LME
1/2# extra light DME
Fill with mingled cream and amber,
I will drain that glass again.
Such hilarious visions clamber
Through the chambers of my brain.
Quaintest thoughts — queerest fancies,
Come to life and fade away:
What care I how time advances?
I am drinking ale today.

Bottled the Belgian pale ale today. 5.6% ABV, and smells awesomely good of peaches and pears! Also, this was my first brew that I batch primed. Was a lot easier and smoother than I pictured. Hopefully it all works out!

Nice, yeah batch priming makes it waaaay easier.

I brewed up 5 gallons of a Chinook IPA last Sunday, didn't start bubbling until Wednesday I think I was keeping it too cold. I let it warm up a bit on Wednesday and off she went like a rocket.

It's slowed down for sure now though, gonna check the gravity today and tomorrow, might be time to rack it to the secondary for dry hopping.

This will be the third time I make this recipe, hope I kept it cool enough, the first time I made it...man...I haven't been able to make it that good again since.

Nothing but Chinook hops,
1 oz 60 min
.5 oz 10 min
.5 oz 1 min
1 oz dry hopped for a week

Mmmm...not crazy, but chinook is strong enough to really make it hoppy with only 3 ozs.

Yesterday I brewed a Stone Sublimely Self Righteous and it looked like it'll come out great. I used 1.5 packs of 04 and aerated the crap out of it and it took off in 4 hours.

Next up, Stone Levitation. Seems I'm on a Stone kick right now.

There all over the net and 'Can You Brew It' has a lot of them. Some come from Stone but some, like Maharaja, are actually listed on the Avery Brewing's website.
I'll let you know in a few weeks if my SSSR came out even close. Sometimes, you just don't care how close it is, as long as it's good.
