Today I'm brewing up an all grain FIT's DIPA. It's a 2.7 gallon version of a 4.5 gallon batch Stephen and I did a while back. It's a serious grapefruit bomb, Falconer's Flight is the only hops involved. Love it!

Kegged my Nelson Sauvin Pale Ale a few days ago and my Levitation is still in the Ale Pail finishing off for a few more days of dry hopping. No plans to brew again anytime soon but......

- I have a few beers coming in trade
- Next week I am buying a bunch of Enjoy By
- I have a little hef left in one keg
- I have about 12 of my WCPA Hopstand Pale Ale still in bottles

I won't be hurting for anything to drink for a while.

This evening I'm brewing what I hope is my consummate Nelson Sauvin SMaSH!
I'm trying a few different tweaks to a recipe I've been brewing off and on for about 8 months!
It's Close!!

I used my LPA recipe and switched the lemons for limes.

Recipe Notes

add fresh lemon zest last 8 min of boil - zest from 3 small limes
add fresh lemon juice from 2 lemons after adding wort to the lbk - juice from 3 small limes.

Curious to see your recipe. Mine is "close" to a SMaSH but I used a little munich and some magnum for bittering. I've loved this beer every time I've made it nad it's the biggest hit with co-workers out of anything I've ever taken in to them.

Brewin' a Biere de Garde and a Saison right now...

The Biere de Garde should be ready to bottle next week.

I'll probably bottle the Saison tomorrow... It's been at the same gravity now for three days.

OG was 1.061 and the FG is solid at 1.004 ! The Belle Saison yeast tore it up!

91% apparent attenuation and 7.5% ABV.

right now I am building up a Super Saison, in memory of a fine young man who lets us way too early. Anyways Andy's Ale has gotten it's first sugar feeding & yeast addition. Hopefully this bad boy will finish out at 12% plus.

I finished a great Wheat from PapaG and headed to the final amounts of my Whatchamacallit. Gonna watch the Saints vs. Chiefs preseason which is really a waste of time (I hate preseason) and just chillax.

Bottling my Seasonal Biere de Saison tomorrow. I have a Belgian Dubble ready to drink tomorrow so I may drink that while bottling the Saison

Just a warning this is not a nicely balanced brew, the lemon or lime flavor is there and with some 'power' this is exactly what I wanted but it doesn't fit with the 'style' standards. The abv is also probably higher than many want for this type of brew but to me it was perfect.

I'm doing my first hopstand , per say right now, got an ounce of Nelson soaking after the boil, before the fermenter right now.
Gonna hold it for thirty minutes then cool it to pitch temp and zip it up for tonight!
