I bought a couple of Simply Beer kits on sale, but haven't had a chance to brew them yet. Beerlord and I have a friend in from Japan who wants to brew with us so we're doing a batch today. Some Beerlord put together so I'm sure it'll be drinkable
Its friggin JUNGLE hot out tho and it's going to be a long day but a brew day is better than a work day, eh?

I kegged the stout, to which I added rye and a bit more chocolate, and the sample was quite tasty. I just finished today brewing the brown turned into a pumpkin ale. Smelled good going in.

So far, I've brewed 5 out of the 6 kits they offer. So I'm mashing up something I'm calling "Monk Juice".
It consists of:
2# Thomas Fawcett Oat Malt
1# Simpsons Golden Naked Oats
1# Castle Belgian Pale Malt
1# Weyermann Pale Wheat Malt
1# Weyermann Oak Smoked Wheat Malt
1# Flaked Barley
Some amylase enzyme to make sure it does the right thing, because there is a lot of adjunct in this and the Fawcett Oat Malt isn't very highly modified.
I'll divide this up after it boils and cools, package and freeze some of it, and mix it up as I like with some MoreBeer pils extract or pale malt extract and possibly other steeped grains in another experimental old world Belgian or two and/or another tripel or saison.
It consists of:

Sometime this weekend I will be brewing up some Levitation.....sort of.
I have a lot of leftover hops from 'recent' brewing sessions so instead of buying more for this, I'm going to sub in what I have.
So, I'll be using the Levitation grain bill with a few replacements for the hops.
In the end, I'll up with a nice 4.0% - 4.5% amber ale with using up some Crystal, Amarillo, Simcoe, Mosaic, Nelson and maybe even a little Cascade or Centennial.
I'm going to put the recipe together tomorrow and will likely bump the Levitation thread with this bastard version.

Hey Gang, Had a sad Labor Day. Had first pours for a Citra Saison and an Amarillo Saison. For both I used my usual 49 days from grain to glass. The Amarillo one must caught a bug b/c its got the Nail polish taste,and the Citra one is ok,but seems to need more conditioning time. Oh well,sometimes my sanitation methods are not the best,and temperature control...pffftt. But on the + side I'm enjoying an Amarillo lite,and once it gets cooler here,(if ever),I'm gonna stick to low gravity Lite Beers with different hops,speciality grain recipes,still using the 2.5 gallon fermenters. That should give me a 5 liter mini-keg and maybe a 12 pack of bottles.Enough to satisfy my cravings. Cheers

Tomorrow I'll be brewing my first batch of Maltperiment. This is sort of the base brew. I'm using 2-row in this batch. The next one will be Maris Otter, and so on through the various base malts. I decided to use Saaz hops rather than Hallertau, but they're both softer, floral hops, so I don't think it's going to make much difference, nor would either one be intrusive to the flavor of the malt.
I'll have to keep really good notes, and make sure all my batches follow the same procedure, have the same mash/sparge temps, etc.
