Used the Brew demon conical. Fermented for 3 week. Bottled with 2 1/2 teaspoons sugar per the instructions. Wait 3 weeks then move to fridge.

Solid. You're set up for success!
Here's something that I recommend for first-time/newer brewers:
- Take 1 bottle and put it in the fridge at 1 week to taste
- Repeat each week for the next 3-4 weeks

Yes, it stretches out when you FINISH the batch, but not when you can be drinking good beer.
WHY DO THIS?
Because I'm a curious guy, personally. I have no trouble following directions when the vast majority of people say things like "ferment for X weeks and condition for X weeks" before drinking. But, I don't like to follow blindly either. For me, I did this to *I* could taste *why* I was waiting so long. That first beer might be really good and you'll think, "I don't need to wait any longer", but then you taste the second one and it's smoother, richer, etc. and you'll be glad you did. At some point you'll find where the beer stops improving and you'll know the sweet spot. And if that first beer isn't that great, you'll know what a 'young' beer tastes like in the future, too.

Just a suggestion.
The only thing I'll add is that when you refrigerate your beer, I find that 3 days is MUCH better than 1 in terms of getting the carbonation to absorb back into the beer (versus being in the headspace).

Keep in mind, that if you ask 5 brewer's for advice you'll get 15 different ways of doing something so I'm just tossing out some food for thought here.

Final piece of advice: Get brewing' that next batch! :clink:

2 1/2 is what it said. At least I hope that's what it means.
It's been a week and I just put a bottle in the fridge. I'll see how it tastes in a couple days.

2 1/2 tsp is OK in a 1L Pet but it is still more then you need unless you happen to like beer that is highly carbonated.
