If the can says its for two gallons, I have two one gallon fermented, can I or should I divide the can into two?

You can. Don't worry too much about splitting it perfectly, it hard to do with liquid malt.

Other question, if I don’t use the whole can at once, can I save the rest in another container?

Yes, if you sanitize the container first. I used to cover the open can and put it in the fridge.

If you have any vodka at home it's not a bad idea to pour a little on top of the LME in the can to prevent mold.
