That's actually not a bad recipe for Jambalay. I'm no expert but lived near enough cajuns and foodies down in NOLA but a few things can make it even better. First, you need more onion, bell pepper and celery... almost double the amount you listed. And, if you can get a hold of some really good smoked sausage or even some andouille sausage to add to it, it will make it zing.
