Re: What are you brewing/bottling/kegging?
I dusted off the recipe for the Fresh Squeezed clone and swapped out Citra and Mosaic for Southern Passion and Southern Cross hops.
Since I know the grain bill is tasty, this should be a nice experiment to see what these hops bring to the table.

Cleaning up now, just put a Honey Brown Ale in the carboy. The IPA went nuts, now down to occasional burp. 2.5 more weeks to keg it. Going to work up another cream ale in a couple days. I have some flagship yeast I want to try, I know how the cream ale taste so this will tell me if I will like this new to me yeast. 8-}

This morning I brewed another one of Midwest Supplies' Beer. Simply Beer recipes. It was their Brown Ale, a 5G Extract w/steeping grains recipe. I didn't quite get to the recommended Original Gravity 1.048 but read a 1.043, will that make a noticeable difference, ehh probably not. I'll see what the final gravity is when it's done of course and see how the ABV turned out. I've made this a number of times and it's usually pretty good.

Re: What are you brewing/bottling/kegging?
Nah, that's gonna turn out just fine.
I brewed ~6 gallons of a Frankenbier single hopped Black IPA to use up stuff, so it had 1# of Munich, 3/4# of Vienna, 3# of Pilsner, 6# of Pale, 3/4# Midnight Wheat, 1/2# Cara 8, 1# of dextrose, and 12oz of Azacca Hops (I have a metric %%$%! ton of them due to some sale), I threw the hops in a little bit at a time starting at T30, so ~3 went into the boil, ~5 went in at flameout, and I'm gonna dry hop the rest. I am gonna guess with this much Azacca it will actually have decent amounts of flavor and aroma. (Azacca tends to be milder then something like Simcoe in my experience).

Kegged the Czech Amber Lager today. This one is going to be interesting. He aroma is like a mild Oktoberfest, but the flavor is all Pilsner with an ever slight touch of roast to it.

The last time I tried it I didn't like it as much as an all Simcoe beer, but I think I didn't use enough hops and/or my hops were on the older side.berryman wrote:I did a kinda' PA-IPA with all Mosaic and I really liked it.FrozenInTime wrote:I'm in the boil stage of an IPA using all mosaic hops.

Kegged the ale version of Oktoberfest yesterday, cleaned up the fermenter and brewed a APA today.

Re: What are you brewing/bottling/kegging?
Just tried my first brew of the One Evil Pilsner. 2 weeks primary, 3 weeks bottle. I was pleasantly surprised based on the green apple flavor on bottling day. First pour was nice and golden, clear, tasty, and maybe just a hint of green apple, but not quite ready yet. We shall see what another week in the bottle does.
2nd and 3rd pours from the 1 liter bottle were not as good as the sediment got mixed in a little bit, then a lot. Might have to pour a small glass and then the big mug to reduce sediment disturbance.
Overall I am pleasantly surprised with the outcome. I did not follow the BrewDemon carbing directions, I compared 3 different calculators (screwy, northernbrewing, priming formula) and came up with an estimate of 2.5 CO2 vols. (49g of sugar). I did go about a gram or two heavy, but the carbonation was pretty darn good and I didn't have to worry about over carbing.
Holy crap, I made beer!

Nice job. I think you will be amazed at the difference between the one you just drank and the ones you’ll drink in a week. 2 to 3 more weeks will be even better. But it’s hard to wait that long.

Re: What are you brewing/bottling/kegging?
Congratulations on your first brew!
The more time they spend in the bottle, the more compact the trub will be. A few extra days in the fridge will help that, too.

Great Job on your first try, you are right "made beer"MichaelJ wrote:Just tried my first brew of the One Evil Pilsner. 2 weeks primary, 3 weeks bottle. I was pleasantly surprised based on the green apple flavor on bottling day.

You could try pouring the whole bottle into a pitcher with one pour and leaving the trub behind. That's one thing I don't care about with 1 liters. They make PET's in smaller sizes.
