Two sections of Peter Damerow's "Sumerian Beer" write up bookend that time frame.
He writes about beer in the Late Uruk Period (c. 3200-3000 BC) and the Old Sumerian Period (middle of the 3rd millennium BC - 2500ish BC).

I believe at this time written records are talking about using "beer bread" to make beer in both places.

A picture for the article states, "The remains of a row of vats used for beer fermentation......" while the article states, ".....had been used to heat up a mixture of grains and water to produce beer......".

The article also states, "Egypt has announced dozens of ancient discoveries in the past couple of years, in the hope of attracting more tourists."

I'm not sure if I unearthed something I'd have any idea if it were a brewery, cemetary, kitchen, man cave or not. But I think it's great they even discussed temperature control. Amazing how they know what went on that long ago.

......but if there is a large production of unmalted emmer heated in vats....are they really bottling (jarring ?) wheat water?

Another thought about bottling (jarring) beer. To what degree could the beer have or have not still been fermenting. If it is in a sealed ceramic vase, when it breaks the seal it is ready (and would have been carbonated)? If the seal is good would the jar blow out if bottled (jarred) too early?
