Aurora Baltic Porter (5-gal)(PM) - BOS/2nd Place

This award-winning beer (2nd place in Porters Category in 2013 Schooner's Championship and BOS at Besley's Homebrew Competition) is a dark, roasty, chocolatey malty indulgence. I used Zek's Porter from Jamil Zainasheff's and John Palmer's "Brewing Classic Styles" as the inspiration for this recipe. Due to a large quantity of lager yeast needed to ferment such high gravity wort, I recommend brewing a low gravity lager first, and re-pitching the slurry into this bad boy (that's what I did - brewed a 1.042 Pilsner, repitched into a 1.054 Rauchbier, and then into this one). Otherwise - use a pitching rate calculator, such as http://yeastcalc.com/ to figure out how much yeast you will need.

Pilsen Light DME can be replaced with German Pilsner Malt for a full-AG recipe. At the time, I couldn't mash this much grain in my electic turkey fryer, so I used a bit of extract to supplement. If using Pilsner Malt, increase the boil time to 90 min.
