Red Stag IPA

Post by BlackDuck »

The other day I drank a Red's RyePA that I was lucky enough to get from Beer-lord. Then I was reading through the thread by gwcr on his AG Irish Red. And then all of sudden..... . I've either made or had a Black IPA, White IPA, and a Regular IPA (if there is such a thing). The Red's RyePA is close to a Red IPA, but it's more Rye than red. So I kind of combined the malt bill from gwcr's Irish Red and the hop schedule from Beer-lords Red's RyePA to come up with my Red Stag IPA.....what do you fellas think???

With those hops and Maris Otter I say hell yeah.
One thing I'm going to try with my next recipe is to cut down on crystal malts a bit. I heard a pod cast with Mitch Steele that was dated about 3 years ago and he mentioned something that I have to think about. My kegged beers get dank after about 6 weeks or so and he discussed how the sweetness of the crystal malts can turn against the other malt and some hop flavor after some time.
I'm not saying at all that the 1.5 lbs of crystal malt you have is a problem, it's less than I normally have but it's something I'm going to think about in the future a bit more until I can taste the difference myself.

Oh and since you are honest enough to mention borrowing ideas from 2 beers, gwcr and I should get a 10% commission.

I do a clone of

IRA (India Red Ale)

If you’ve visited Bend’s pub-centric Westside or rode the nearby trails, you’ve seen the Phoenix Rising. In the same creative and inventive spirit, we offer IRA. Inspired by the IPA category, this ale is high in hops and caramel flavors from Munich and crystal malts. Cheers to artists like Frank Boyden who’ve made Bend a bit more colorful.

Grains: 2-Row, Munich, Crystal
Hops: Warrior, Willamette, Cascade & German Tettnager
Available: Jun 1 – Sept 1
Available seasonally in 12 oz bottles, draft
6.8% ABV
78 IBUs
1.070 original gravity
1.018 final gravity

My recipe looks like this.

Recipe Characteristics
Recipe Gravity 1.071 OG Estimated FG 1.018 FG
Recipe Bitterness 77 IBU Alcohol by Volume 6.8%
Recipe Color 10° SRM Alcohol by Weight 5.4%

Ingredients
Quantity Grain Type Use
0.90 lb Briess DME - Pilsen Light Extract Extract
3.30 lb Briess LME - Munich Extract Extract
0.25 lb CaraPils - [Body, Head] Grain Steeped
0.50 lb Crystal 20L - [Body, Caramel, Head, Sweet] Grain Steeped
Quantity Hop Type Time
0.50 oz Cascade - Unmistakable grapefruit aroma and flavor, signature hop of many American ales Pellet 20 minutes
0.25 oz Tettnanger (U.S.) - Bittering clean with floral spice aroma perfect for Wheat, Pilsners and Lager style beer Pellet 30 minutes
0.50 oz Warrior -Bittering aromatic properties due to its low cohumulone content Pellet 60 minutes
0.50 oz willamette - Very popular aroma hop with earthy, spicy character for any English or American Ales Pellet 7 minutes

I am pretty happy with it. I think I need to cut down a bit on the crystal 20 but it is pretty close to the original.

I've re-worked the recipe a little from the first time I posted. I won't get to brew this for a while as I've got a pale ale going now, next is the RCE recipe that Rayyankee and I are doing. So this is a ways out yet. But here's is the adjusted recipe:

I'd buy it.
I have to admit, I'm quickly becoming a fan of Columbus.
