Razzle Saazle (Berliner Weiss, Sour Mash)

Post by philm00x »

So after having my first sour mash under my belt, I'm wanting to do it again to keep practicing. On my quest for knowledge about the sour mashing technique, I came across a page with information on how to do the technique, but using a Berliner Weiss as the recipe. The recipe split into two batches, one for a raspberry Berliner, the other for a strawberry lemon Berliner. The raspberry sounded a lot more up my alley in terms of flavor, so I took the recipe and tweaked it to make it my own.

--------------------------------------------------------------------------

I don't know when I'll have time to brew this, but with this recipe, I'll be sour mashing the full grain bill instead of half, like I did with the KY common. I think the fruit will offer up enough sweetness to balance out the sour from both the mash, but I probably won't sour mash for as long as before since raspberries offer up some pucker as well.
