It's a little over 2 hours since I opened the Old Guardian...and I'm still drinking it. At 11.6%, this is one ale you can't drink fast.....and my eyeballs are starting to itch!!!!

I'm drinking a Stone 17th anniversary Gottdamerung. I haven't made up my mind on this one yet. It seems to have a pepper and alcohol after taste but the taste is intriguing.

Another liter of either the cerveza or the pilsner. Can hardly wait till this stuff is gone.

If you ever end up with more of the cerveza somehow, try to look up my "cerveza del vapor" or something like that on the old Mr. Beer forum. I basically made steam beer out of it and it was actually pretty good.

The pilsner is just pride of Ringwood city, I pretty much hate it. The Brew Demon version is much better. (the old Pilothouse Pilsner).

I'm drinking more of my Pacific Gem Saison. I love this stuff. The tartness and spicyness mixed with the fugglicious is just yum.

I am trying some of the White Wheat I bottled last week. The hops didn't come through as well as I had hoped they would. But it is a nice light beer. Not exciting but certainly very drinkable.

My last bottle of Maharaja......not nearly as good as when fresh. Got a bit dank but still a good beer with great aroma. It shall be brewed again before the years' end.

I am drinking a kit that was supposed to be a raspberry lambic kit that was given to me as a gift.

The results of the beer have not been favorable. Some of the bottles aren't carbonated but they still make a hiss when you pop the top it's like the yeast tried but failed to carbonate the beer. This sample is more than 6 months old and it is actually starting to taste better. It no longer tastes like the hops are overpowering everything else. But this has made it taste very much like a raspberry syrup with some funky yeast flavors. The primary flavor reminds me of La Fin Du Monde in it's spicy/yeast flavor but it's way more powerful than that. Then there is a very sweet raspberry flavor left in your mouth. But again with age it tastes way better but I'll store the rest away for a few more months and see how it is.

I'd drink that too!

Y'all would like my half baked Chimay Doree like beer. And probably the one I just brewed tonight which is a lower abv (patersbier) version of a Chimay Red like substance with just a tiny bit of Nelson Sauvin thrown into the mix to make it fun. I think the hint of grapyness of it will play nice with the plum from the WLP500+D180L.

I'm drinking even more of my Pacific Gem Saison. I poured this like an hour ago. I did not use any finings or cold crash. It just came out crystal clear on it's own.

Mashani: Have you posted the recipe to your half baked Chimay over here? I *used* to have that thread favorited *cough* because I was hoping to make it at some point.

Last night I had one of my partial mash Blonde Ambition IV. I got the recipe from philm00x. At first I was a little disappointed with this beer, it just tasted off. It has now been in bottles for 2 months and it is getting much more drinkable. I still have most of them left because I wasn't drinking them. I don't know why, it was a relatively low gravity beer, it should not have needed over 2 months conditioning, but it did. I wonder if its something about honey malt...
