Right now, I'm digging Nelson Sauvin and Sorachi Ace. Just got a pound of each and already got one brew out of them!
I did do a amarillo/citra APA that I'm sipping on now that has a very good flavor.
I like those two very much also!
As far as picking one, it's impossible at the moment because I've used so few variety's in my brief brewing career!

I am a Noble Hop guy First and second Cascade
Noble hops
The term "noble hops" traditionally refers to varieties of hops which are low in bitterness and high in aroma. They are the European cultivars or races Hallertau, Tettnanger, Spalt, and Saaz.

I've only made about 1/2 dozen batches adding hops, and I'm happy when I say "Hey, this tastes like/better than Blue Moon" or "tastes like/better than Moosedrool". I'm no where close to be able to say "if we used a little more X" or "if I added X at 30 minutes instead of 20".
I'd love to be somewhere where someone setups up a way for me to be able to have an opinion on this. Like, here's the same base brewed with hop A, hop B, and hop C - can you see the difference?
I keep hoping my LHBS does something like this, or has a hops education class.

Rick, a great way to do that is to make a SMaSH recipe (Single Malt and Single Hop). That way you know exactly the flavor and aroma you get from a certain hop at a certain time. Small 1 gallon test batches work for these, or you can still do it at LBK size. The great thing is you're not only learning, you're making beer!!
EDIT: Forgot to add, that you can also make a "hop tea" to get a good feel for the flavor and aroma. Take an ounce of hops and add about a quart of boiling water. Let it steep for 10-20 minutes. Quick way to get a better feel for them, but you don't end up with beer at the end...

I have favorite hops for certain styles. But defenatly my tastiest hops have been Amarillo Galaxy and I really like Centennials.

Just bought a pound each of saaz and hallertauer .... but I really like amarillo and citra.
But saaz ifs probably the single hop I've used the most. Mostly in pilsners

If I had to pick just one... Simcoe. If I can have another then Czech Saaz (not the crappy American stuff). If I can have a 3rd then Styrian Goldings or Fuggles... or EKG... or Columbus.. or Amarillo... or LOL...

Cascade is my favorite followed by Saaz.

Anything without a (r) or (TM) after it so I can grow it.
Cascade has been my go-to hops as of late. Second strangely enough is Nugget as SWMBO just loves my Clutterbuster SMaSH, and if it makes SWMBO happy it makes me happy.

I like all the "C" hops but my favorite is warrior hops....right now anyway. it has a very smooth and pleasant bitterness that I enjoy a lot.
