I didn't find the gravities on their website. Anyone got a link? I just bottled One Evil Pilsner at 1.016. I'm not worried, because it wasn't sweet. But I do wonder what the FG should be.

I'm thinking round 1.040 to 1. 42 ish. It's the same as the old MrB recipies, I never did this one. Hopefully someone will chime in that did the old pilsners. Like u said, if it did not taste sweet, I think your good to go. Just in case, maybe carb/condition the bottles in a rubbermaid type container, but I think you'll be fine.

The OG for this recipe is probably somewhere between 1.045 and 1.050, so your FG = 1.016 seems to be in the ballpark. The consensus seems to be that the BrewDemon yeast is S-33, and my experience with S-33 has been getting 65% to 75% attenuation, being lower when the OG is lower such as 1.045. Starting with OG = 1.045 and getting 65% attenuation would produce FG = 1.016.

Brewdemon said their yeast is S-33 in a post somewhere. It's not a high attenuation yeast. So yeah.
