I've been craving stouts and since most should sit a while, I figure, let me brew this now and by late December, I'll have it.
I've read so much about Big Honkin' Stout on NB's forum then looked at it closely and thought it's right up my alley. Hoppier than most stouts, I wanted an American style stout. Supposedly, you can drink this faster. And, I've always liked Williamette in my stouts. I hope it's roasty enough for me.

It looks like it will be plenty roasty. You've got a lot of dark malts in there. Its hard to beleive your doing a batch with no dry hop.....it's gonna be awefully hard to not touch the fermenter until it's done. I bet you'll be on the verdge of insanity while this one ferments.
