Bottling up a red wheat beer i made for SWMBO although i must say the sample tasted pretty damn good.

Brewed my second ever BIAB. I call it "Left Over Pale Ale" because I made it with a bunch of grains I had left over from the first BIAB I did and some I had left over from some PMs I had done. I even got to use my new grain mill on this one so now it seems as if I own this this one more so than any other beer I've made so far.

Brewed up another Mac & Jack's African Amber clone today... A variation, call it a 'B' version of the one I brewed last week. Little bit different malt selection. Last week I had Gambrinus ESB pale, Crystal 80L, and Wheat malt. This week was Gambrinus ESB pale & Crystal 80L. I will call this a 'scientific experiment'.
I took a gravity reading of last week's batch; about finished at 1.020, so I dry-hopped that one with some whole leaf Cascade hops.

I bottled the modded NWPA w/DME + 1oz Ahtanum hops. It tasted decent, so I think I won't be as disappointed with it as I was with the straight up NWPA. Still likely the last can of NWPA I'll ever get (at least on purpose).

I just started up a winter spiced chocolate cherry stout. No cherries YET, I will be feeding them in a few days. It's based on a 1.046ish chocolate stout, the cherries will bump it up but not a huge amount, so it's going to be drinkable by the holidays. Which was the idea.
If it doesn't turn out to be totally crap I'll post the recipe. I have no idea at this point between the spices and the cherries, I just took a SWAG at it.

Bottled a fiver of Bit O' Bitter yesterday, and will be brewing up a fiver of FedoraDave's American Ale this morning.
I also brought up a fiver of South Ferry Steam Beer yesterday. Been in the bottle 3 weeks, but I tested one yesterday, and it's definitely drinkable, even if it hasn't peaked yet. It's nice to see more homebrew in the beer closet. The pipeline is filling out.

For the first time EVER I will be brewing on a weekday. Have vacation that I need to use and can't think of a better way to spend it. Will be brewing what I call Zoo House Saison.
Pilsner, a little wheat and Munich with EKG and Bella Saison yeast.
Going to pitch at about 68* let it free rise and then ramp it up to 85-90* over the course of the week.
Going to be trying out my new thermowell and reptile tape for this one. I'll keep everyone informed.

Took my last can of Mr. Beer Diablo IPA. Added it to 1/2# of DME with a 20 minute hop stand of 1oz of Falconers Flight. Tossed it into my LBC and topped it up to a full 2.5 gallons. Tossed in 11.5g of Nottingham.
Diluted as such, it's not an IPA. Instead it will be an overhopped APA. Even diluted that much the Diablo has way more IBUs then an APA, and I gained at least 10 more from the hop stand, plus all the falconer's flight flavor/aroma goodness.
I like that.

Brewed up a hard cider today. I like to let them condition for a year, so this is next thanksgiving's cider. I'm using left-over cider from my own trees, looking forward to trying it, albeit next year. My cider has some great flavor so I'm excited about it.
All done, kitchen cleaned. The OG blew my mind, which is easy as I don't have too much grey matter.... LOL
OG=1.120, if the lavine 1118 holds up, should be around 1.030 when finished. That is using the beer formula. I'm hoping it gets down to 1.000 or there abouts. Man, if it does, holly poop batman is this going to be potent! I spit this between 2 1-gallon carboys, not quite a gallon in each. This is probably why it is soo high. I started with 2.25 gallons of my apple cider, I put sugar/spices/lactose in for 2 gallons finished product but must have boiled it too long. I could have added more water, but I figured what the heck, let's see where this takes us. I bet both carboys have a pretty good blowout. If this does not get down much past 1.030 or so, I might drop in a little more sugar and put in some champagne yeast, we will see were I go with it. With the lactose added, I want as much of the sugar eat'n up as possible, don't want to taste like apple syrup when it's done.... LOL
Now to do some yard work. I did the brewing this am to avoid it... freaking 26 degrees out this morn. Heck, it's only 33 out right now.... could eff off the rest of the day......
