3 Pliny's? Oh my.....sleep well my friend.
Re: Pliny the Elder
I drank mine last night and got a headache.
Today I drank way too much and am working on a hangover. Glad I'm off this week. Will sleep in.

Re: Pliny the Elder
My final word on my 'Pliny the Fusel'.....I brought a growler with me last night for jam night and everyone loved it! They make faces when I say I can taste the fusel. However, the colder it is, the less I notice it and it's really much better. It's also almost gone. I was going to dump it but even I have to say that it's better than most anything I made back in the 80's.
Might not be saying much but seriously, this ain't great but its not that bad. No headaches either. I would never have guessed it to be subdued after a number of weeks. I'll likely brew this again in the near future with my fingers crossed that my 2 disasters (well one if I did keep and finish the Pliny) won't reappear anytime soon.

Re: Pliny the Elder
I didn't read the whole thread, but why do you think you got so much fusel alcohol? Has to be temp during initial fermentation. Or sometimes it's just that really green taste you get when you use a lot of hops. You can always send me some for testing.
Re: Pliny the Elder
Even though I was careful, there was obviously a fast and high enough temperature spike that likely caused it though I really have done nothing different in all my previous brews. I chill down right away now to 65 or less then pitch the yeast and don't even allow it to go above 68 for the first week.
What I have left in the keg is basically dreggs. But the next time I make it, I'll definitely send you some.

Funny this came back to the top, I was thinking about my re-brew on this earlier. It will be the same except for the .25oz second dry hop. That will be 1oz each in the keg, when I rack the beer in. That should ramp up the aroma a notch.

Back on top again.
OK, I'm confused. Had more of the Pliny last night and its' been in the keg awhile so it's getting dank but all the fusels are GONE! Everything I've read said this doesn't happen. It might mellow but it never leaves. Makes me wonder why I pitched 2.5 gallons of Sublimely (though I have 3 bottles in storage).
I do have a bottle or two of Pliny I'm holding and I'll see what happened to those after more aging.
In the meantime, my mates think I'm crazy and never did see anything wrong with it. They just think I have fusel in the brain. Glad I sent a few of these out so that I have proof I wasn't crazy.

Re: Pliny the Elder
Maybe there was something else in there that mimicked a fusel characteristic. Not sure what it would be though. If you remember back to my comments, I originally thought that it was just a different hop bitterness of some sort, then after it warmed up, I was picking up the fusel. So maybe it really wasn't fusel after all? Sneaky little bastard!!!!

Okey, Dokey it's in the fridge, 6 gallons at 1.067. On the right is one of the last glasses of the first, left the sweet wort from today.

Just got back from a friends house. Pitched on 1/2 a Sierra Nevada yeast cake and I have action in the blow off jug 4 hours later.

We have lift off. This is what I found this morning. The pail next to it is the mother of all the daughter yeast that are rocking out.
The temperature probe is going into the Thermowell. I've used it 3 times now and LOVE it. Now I have true wort temperature.
