I decided to take a sample reading of FedoraDave's American Ale, which I brewed last weekend, and which blew the bung off twice in the first 24 hours. It's already 0.002 below the projected Final Gravity. Even so, I'm going to stick to the schedule of 2 weeks in primary, rack to a secondary for a week, dry hop 24 hours, then bottle.

Thing is, I tasted the sample, and this is a good beer! Better than good, actually. A simple recipe, but a complex taste experience, from the first impact to the lingering finish.

The best thing is, I created this. From formulating the recipe to brewing the final product, this is my creation. I made a beer I could actually charge money for. I am proud to put my name on this, and proud that this is my "House Beer".

You're too hard on yourself Dave. You're an accomplished brewer, know what you're doing and it's no surprise to me that your beer would be exceptional.
But it does feel good when a plan comes together. And, I love tinkering with malts and hops and tweaking them to my tastes. It doesn't matter if anyone else likes them or if they win awards.....you design it, you brew it and you get to drink it.

I love the recipe for the American Ale you shared with me. Made it twice so far, slight mods, only because the LHBS was out of the hops. I'd love to try the real deal....

I'll post it here, and in the Advanced Recipes forum. For some reason, this site is being touchy when I try to post a reply.

Anyway, here goes:

FEDORADAVE'S AMERICAN ALE - 5 gallons

2-Row - 9 lb.
CaraPils - 1 lb.
Rye malt - 1 lb.
Melanoidin - 2 oz.

Simcoe - 1/4 oz. - 45 minutes
Simcoe - 3/4 oz. - 22 minutes
Simcoe - 1/2 oz. - 7 minutes

Crushed coriander seed - 1 tsp. - 5 minutes
Whirlfloc - 1 tablet - 5 minutes

WLP001 - 1 unit (yeast starter)

Primary fermentation for 2 weeks. Rack to secondary after 2 weeks. Dry hop 1/2 oz. Simcoe 24 hours prior to bottling.
