It's churning away at 66. I was aiming for 64 but still dialing in using the wine fridge and older JC to nail things down. It's still within the right temp range, so all is good. Man, when I opened the mini fridge to check on temps the smell was just awesome. It's been 9 days and I'm anxious to see how this one is progressing. I'm going to take a gravity reading later to see where it stands. I'm traveling this week so nothing will happen until next weekend but I'm curious.
I think I'll dry hop the Amarillo for 24 hours, then cold crash for 24-48 hours, then keg hop the Simcoe when I transfer to the keg.

Ron, I put the keg in the fridge last Thursday so by the end of this week I'm going to pour one and try it. I'll post when I do and try to get a pic or two posted when I do. I'm curious to see how the screen works on the kegs, and how much if any hop particles get by it.

Took my sample tonight - 1.012. I doubt it will go any lower, which is fine by me. That will leave me at 6.8% which is great for an IPA. With all the hops in this one it will provide a nice backbone, too. The sample is cloudy as hell with all the late hop-stand additions but I'm sure it will clear with time. And if it doesn't, who cares?

The first pour was about 12 oz of trub, the picture is of the second pour, some chill haze but no floaties and a nice white fluffy head that’s sticking around. LOTS of aroma from the hops, really smells great. If I closed my eyes I’d swear it was a Pliny. Taste is pretty good, again LOTS of hop flavor and the bitterness is very smooth, I think it’s the wheat malt that’s giving it a smooth mouth feel and causing the hop flavors to hang around on the tongue a good while. I like the amount of bitterness on this, although it seems a little more like 70-80 ibu’s and the malt is taking a back seat. I think another week will give it time to clear more and for the hops and malts to be a bit more balanced.
Dry hopped with .45oz of Simcoe and .70oz of Amarillo in the keg and didn’t use any hop bags. Put hops (pellets) in the keg on 11/3, and then in the fridge on gas 11/7. Used a hop screen on the end of the dip tube……

I'm going to try and 'layer' the hop by doing the Amarillo today for 24 hours before I crash it and keg it. I will keg-hop the Simcoe.

Some I've seen online are made of the screen type material, kind of like you find on a Bazooka screen, but mine and the ones at the links posted are perforated holes in SS.
The "just brew it " home brew shop were I got mine is on hwy 85 between Riverdale and Fayetteville. Doug is the owner and really has a nice shop, been going there for a few years now, and he's the one that suggested the screens. He's been using them for a couple years now and hasn't had any issues with them. He did say if you don't shorten the dip tube you can get it stopped up with hop material. So far, I've gotten good clean pours with it on.

I've went to Just Brew It a few months ago. Dropped my wife at the airport, had their address and went by. I agree, very nice folks there. Don't know who was there, but was treated very well and they carried everything to my truck. 50lbs each 2 Row and Maris Otter and a few other things.

Kegged this morning. I keg-hopped ~1/2oz of Simcoe and the keg is now waiting patiently for me to kill the Levitation keg. I will do my best tonight when I get home and watch the 49er game.

Levitation ale?....shouldn't be a problem with that one. I just finished my 4th glass of Keanut and it's improved some, more of a balanced hop/malt flavor. Still can't believe this only has a fwh addition and the rest of the hops at the hop stand/dh, I will say that I wish I hadn't over shot the abv, it's a bit much like a DIPA and I think the lower abv would have let the hops take more of a front seat. It will be interesting to see how my compares then. Mine came in at 6.9% so it's a full percent lower in ABV than yours. Now, back to that Levitation...*hic*
