I plan to brew Northern Brewer's Brickwarmer Red tomorrow. I am splitting it into two fermenters, which allows some interesting variation. My big pot is 20 quart. Usually for five gallon batches I top off several times: late in the boil, in the pot before cooling, in the fermenter if necessary. But I could use two 12 quart pots, allowing for less topping off. I can also add cinnamon to one boil pot, or to one fermenter.
So, any thought on the two pots? Anyone done it?
And the cinnamon, how much? A stick in one boil? Or one fermenter? What is your experience with cinnamon?

OK, mashing, boiling in a single pot. Will add cinnamon to fermenter after primary.
