i almost had a lil overflow myself recently the krausen got to about an inch or two from the lid...only cuz i added a lil extra water for a lil more beer

Sorry I'm late to the party. All has been covered, just clean it up as it goes along. Clean and sanitize a spare lid and when it slows down, removed lid, clean the threads with a sanitized soaked paper towel and put on clean lid.

Well the beer gods woke me up at 3 AM and this is what I found...

No problem about the mess and I replaced the lid with a clean one but the temp strip was reading 80F. :(

Aside from fusels anyone know what off flavors to expect, we pitched T-33 that was a year old.

Another thing that I'm not sure was mentione is to really make sure you clean and sanitize the spigot.

I'm not to sure about the flavor but it might end up being funky. Some people like it funky.

When Ive done that - usually due to way overestimating my boil off rates - Ive tried to ferment to the very low end of the temperatures as possible assuming it is a yeast that doesnt have strange low temperature characteristics. Now, thanks to the bakery section of Krogers, I now have a 1/2 and 1 gallon fermenter for just such emergencies.

I considered throwing an airlock on a bourbon bottle but since BB2 hasn't ever seen beer pron ... :p

RE: the 80 degress - S-33 is actually an ok high temperature yeast compared to many. I think you will be ok, just might get some sort of Belgian/Wheat beer like flavors.

Thanks Mashani that is a great comfort to hear. It's all settled down now at 66F and I'm getting some great whiffs from the Galaxy hops.
