Widmer Bros Alchemy Ale... Fantastic beer! The malt up front is so smooth and mellow, and then the Alchemy hop blend is subtly citrusy in the finish. Quite drinkable, very delicious.

They are both great beers Phil. The only beer my wife likes, so guess who has to learn to brew sours now. I have a pound of Lambic hops on the way from Farmhouse Brewing. I am required to keep a bottle of the apple and cherry in the fridge at all times.

My wife wants to try them as well, because she's hooked on framboise as the only beer she'll drink. Her favorite one was the Mort Subite framboise, but she really likes the Lindemans one as well. She hasn't asked me to brew them, fortunately since I don't have a set of equipment that I can dedicate to bugged beers. I have seen the lambic hop blend at Farmhouse, and thought about getting it, but that probably won't be until she asks me to brew one.

Mine hasn't ask me to brew one yet either. I figured since I'm branching out might as well try this style also. I going to do this Lambic. Going to do 6 gallons and split between two 3 gallon fermenters with Wyeast Lambic and Roeselare blend yeasts. Set the in the spare bedroom for a year and see what happens.

Drinking a 1 year old Winter Dark Ale. It has aged fairly well.

Wow, I didn't know farmhouse sold old aged cheesy hops. Sweet. Now I know where to get some of those if I ever decide to brew a real sour again. That's the right way to do it (at least traditionally as the Belgians do) - use what seems like a stupid amounts of really old hops instead of a more normal amount of fresher hops. Helps the yeast get a foothold before the bugs.

Anyways, OT, I busted open a Quad that's been in the bottle for 18 months. I needed a Quad after my brew day. I feel better now.

I did enjoy the apple lambic. Have only had it and the raspberry ones and I liked them both. Makes me want to try making my own sometime. Earlier with dinner I had this and loved it very much:

I have been low carb/gluten free-ing it this month (dropped 11 lbs so far), but screw it... I have the Titans on the television, and I have a Yazoo Hop Project 75 that needs drinking while it's fresh... This one is made with Warrior, Columbus and experimental hop #05256. If you haven't heard of #05256, it is a U.S. hop, bred from a Apollo and Merkur parentage. It's good for bitter, aroma, or flavor. Flavors of "black currant, dark fruit, strong herbal notes, pine tree, mint, light grapefruit rind, “Simcoe like”, citrus, tangerine." It's nice in this beer. I may have to order some of these hops...
