Hefeweizen question
My wife recently discovered how much she likes a hefe so I brewed her a batch. It came out very tasty, I was going for a Troeg's Dreamweaver and came pretty damn close. It has a nice clove and banana flavor and smell along with just a hint of bubblegum. My question is concerning the long term storage of the beer. My wife doesn't drink beer often and without my help it would take her a year or more to drink the whole batch (but don't worry I will be helping her a little). So here's the question, will storing the beer in a dark cabinet at room temperature cause the flavors to change drastically? I know with the hoppy beers tend to fade with time. I was wondering if the WLP 300 yeast would make stronger flavors? Should I store it in the fridge?

Wheats are said to be best young but I have some over 6 months old and they were still great.

I have made many hefs for my wife and stored properly they will hold up quite good to a year

I'm drinking nearly year old wheats right now in my pipeline. They seem quite tasty to me.

All of my wheats are good to drink really fast, but they do hold up well too. I just keep my beer in boxes in a dark corner of my basement which is 50-65 degrees depending on the time of year.
