You know what's weird? I have yet to brew this recipe with Northern Brewer hops, which is the signature hops for the style. I've always had to substitute. Next time, for sure, though.

Pacific Gem Saison which just is still one of the most excellent beers I've brewed in a long time. There are lots of h8rs of that hop, but it worked great here.

Oh, I know. The Hat's First Rule of Homebrewing is "If you like the beer you made, you did it right!"

Thing is, I'd like to eventually enter it in a competition, and the style guidelines sort of require NB hops to be used. It would be silly to be gigged a couple of points for something as simple as not adding the signature hops.

I haven't ever used it or tasted it, to my knowledge, but I just looked it up at the Northern Brewer site. The grapefruit hops strains can be tricky, and it seems you either like them or don't like them, although the dislike may arise from overuse, especially in the bittering boil, which can lead to the infamous "cat pee" phenomenon. I think Citra is the same way; used judiciously, it can really enhance some recipes, but just a little too much can tip the scales and become distasteful.

I can see that kind of hops working well in a Saison, though, from a stylistic point of view. Ain't it a grand thing when you hit one out of the park like that?

Stopped at the Filling Station to get a growler fill of Rogue Beard Beer, but I'm going to keep that for Thanksgiving. Today I'm enjoying my Conan IPA, made with Conan yeast harvested from Cool Springs Brewery. It's quite good, IIDSSM.

At least in my limited experience, it's much more strong in the earthy/spicy fuggle or styrian goldings manner then it is citrusy. It has hints of citrus and hints of some musky melon, but they are very much in the background - it's nothing at all like Citra. It's seriously more like fuggles on crack. I did not do a long bittering boil with it, as I had no need to in order to get the IBUs I wanted. It was more of a hop burst. So my bitterness is not harsh at all.

I think folks hop bomb APAs/IPAs with it thinking "cool another high AA hop" thinking they are going to get some cool melon and citrus -- but nobody expects the fuggley inquisition. But that's what they get and it's totally not what they expected or wanted in an IPA or APA.

But all that spicy/earthy flavor/aroma goes really well with the spicy/tart saison yeast.

But if you hate fuggles or even are just not all that fond of fuggles, you would hate this. If you like fuggles then you would love this.

Oh and I'm drinking what I called 'Merican amber. Basically Munich + 60L (partial mash) + DME + Cascade. 1.054/1.012, 47ish IBUs, most of them from hop burst type late hop additions. There is a lot of cascade in it. Its yummy.

Ice tea, had coffee this am. We have to go to town to pick up my daughter coming in from Seattle this afternoon and our son is coming out for the week. Tonight I plan on hitting the peppermint schnapps, it's a family tradition the last few years, that and a long game of either monopoly or draw four. Turkey day I have half a keg left of Oly-FIT IPA we will probably try to finish off, hopefully after turkey dinner.
