Most of my family was out at some concert today, so I had time to brew "for real". And I was out by my moms yesterday, and the bigger LHBS in these parts is there, so I stopped in. A 10# bag of Maris Otter called out to me, so I got me some. Also got some 75L British Crystal which I am fond of. An they had very fresh smack packs of Wyeast London ESB, so I grabbed some, along with various other grains, various hops, and other goodies. They were out of Fuggles, so I got me some Styrians. They were out of EKG, but I decided that this was ok, I wanted to be a bit different anyways. I have made a beer much like this with fuggles and EKG before and it was delicious. The toasted malt gives it nice nutty flavors. I think the zythos will make this very interesting as a sub for the EKG along with the slightly more citrusy Styrians.

2.5 gallon batch - BIAB - full volume boil:

4# Maris Otter
1/2# Oven Toasted Maris Otter (toasted at 275 for 1 hour on a cookie sheet)
1/2# 75L Crystal
1/4# Flaked Barley

I oven mashed this @152, although I screwed up and my temps dropped to 148 at one point, I forgot when it's this cool in my house I need to fire it up a bit sooner then other times of the year. That's ok, it's still going to have plenty of body.

1oz Styrian Goldings (4%) @60
1/2oz Styrian Goldings @20
1/2oz Styrian Goldings @10
1/2oz Zythos (7%) 30 minute hop stand.

I got 1.054 OG, should be around 45ish IBUs.

Wyeast London ESB

EDIT: I am going to dry hop some Zythos too I think.

Mmmm... Something about that toasted/roasted MO and the 75L has my mouth watering...

If you've never toasted malt before, it's easy to do and it gives your beer a unique touch. What I did here will be sort of like using Victory malt, but it's not exactly the same obviously. If you don't want to mess with it you could sub Victory malt though. Or Vienna. Either would make good beer I'm sure.
