'Murican Wheat II

A while back I made my 'Murican Wheat Ale and it turned out great. I shared my recipe with philm00x and Jimjohson and both of them liked it as is. Phil even converted it AG. JJ made a couple of modifications and had good results. My initial intention was not to change the recipe, but I got Swen'd. I was shopping for my ingredients online, and really none of the online retailers had everything I needed for the 2-3 batches I was planning. I settled at AHS but was forced to sacrifice. The biggest change is the Munton's wheat DME I used originally will be swapped out for the "regular" wheat DME. They also did not have Crystal 40, so C20 will have to be subbed in. Overall, not a big deal, the heart of the recipe is still there. But I have been contemplating adding some honey malt in there. JJ used some honey malt in one of his mods and I think it turned out well. A slight mod to the hop schedule I think and I might give it a try making it not really a clone of my original, but a little brother of it. Here is what I am thinking:

1/4 lb Canadian Honey Malt
1/4 lb Crystal 20
3 lb Wheat DME
1/4 oz Mt Hood @60
1/4 oz Falconer's Flight @ 20
1/4 oz FF at 5
S-05

Gives me a 7 SRM, 24 IBU, 4.8% ABV wheat beer.
I might also throw in some Carapils. Not sure if I need it however.

Are you steeping the 1/4 honey malt and crystal 20, or doing a full or partial mash?

After much thought, I am scrapping the honey malt. I don't think it will add much to the beer, and results with it have been less than exciting.

Also, mulling over Doing 1/4 oz FF at 45 or 60 (depending on bitterness added in qBrew) and then 1/4 at 20, scrapping the aroma add.

imo the aroma is as important as the flavor. as most of our sense of taste, comes from our sense of smell.
