I took another shot at the HopSLAMber Ale this morning. The first batch was in the LBK that I didn't trust, and I dumped the batch and discarded the LBK, so we'll see how things go this time around.

This weekend I'm bottling the Midwinter Wheat and brewing up another batch of 'NillaMilk Stout (which was also a gusher, so this plague has been around since February).

Well since I got a handful of the Mr. Beer seasonal on sale + 20% = $12.50 each, I ended up with a couple cans of the winter one, the spiced "Belgian". The others I know what I'm going to do with, but this one I was unsure, and skeptical about it since they say it's 58 IBUs or something like that. No authentic "Belgian" beer is 58 IBUs.

I tasted the extract and yeah, it's bitter.

So I added 1# of DME and brewed it as a 2.5 gallon batch. That should counter the bitter a bit and make it more "festive" and less "Americans think all their beer needs to be fooking bitter" Coopers mentality.

So we will see how that turns out. If it's still too fooking bigger (it may very well be) then my other can will turn into a 5 gallon batch as a bittering base with a bunch of DME and some candi syrup added.

Ok, tomorrow we are bottling our Liberty APA and brewing our AmeriWheat beer. UPS shows the ingredients 'Out For Delivery' today which is always a plus. Swinging by the LHBS on the home for the bottles and we'll be set for an all day bottle/brew day tomorrow.

Brewed up 121913. Citra, Cascade, sapphire. (damn auto correct). anyway, it's got washed yeast, 16# of 2 row, 1/2 pound each of carrahell, munich1, and caraamber. Forgot to put in the Irish Moss again... I'm getting good at that. had fun in the 28*F weather...except my water was mostly frozen.
It's all in the fermenters, 1-5 gallon (with 4.5 gal) and a Brew Deamon 2.5 gallon.

It's all bubbling away happily.

I've got to bottle my Das Wit today. Just finished mixing the priming sugar and putting it in the fridge to cool down.

Brewed the 'NillaMilk Stout this morning. Very satisfying to get exactly 2.5 gallons. No waste, and no need to top off with water!

I'm racking my Cream Ale from the 6.5 primary to a 5 gal. secondary. I know a lot of folks on here aren't big on using a secondary, but I like doing it on certain brews and I want to free up my primary fermenter so I can do another batch tomorrow.

Berry, using a secondary is, of course, personal choice. I feel it helps clear up the beer in the final week. And if I'm doing a late addition, like a flavoring or a dry hop, I think it's necessary. Yes, maybe there's a danger of introducing air into it, or of an infection, but I think those are minor concerns.

I've also done it when, as you, I wanted to free up the primary for another batch.

Brewed Hop Head double IPA a 5 gal extract brew kit from Midwest http://www.midwestsupplies.com/hop-head ... a-kit.html This is a fun beer to brew, a nice hop boil schedule and a lot of hops. I've brewed this before, I did a small change this time, I started with a 1/2 oz of cascade and boiled for 30 min before I went with the recipy = 90 min boil. I thought it just lacked a little in the beginning for a high test IPA that it is. I think the midrange is lacking a little but I left that alone and will see how this is.......... This is a good IPA otherwise, ask beerlord he brews this one too.
